While roller hockey has its quirks, the fundamentals of hockey are the same as ice for the most part. You can learn plenty by watching NHL hockey and really focusing on what is going on.

As a team, you need to learn to breakout of your own end, get the puck/ball up the rink and know how to set up to score. If you're new to the sport, I would focus on those three things teamwise. Individually, I'd work on skating with the puck and my head up, crossovers and passing/shooting drills.

(Yeah yeah, I'm a speed guy, but I was a hockey guy first!)

I'll have to agree with what tdellaringa said. Make sure to work on your skating first. Then work on skating with a stick/stick handling. Once you have that, try doing both, but make sure your head is up. Then work on things like passing, shooting, deking/dangling, etc.
Start with the basics then go from there. :-)
